Recipe – serves 4
Ingredients:
4 large Maris Piper potatoes- cut into large chip shapes
20g goose fat
3 tablespoons of plain flour
Maldon sea salt
Vegetable oil for frying
Vinegar
Deep fat fryer
Method:
Steam the chips until they start to become tender and then leave them to cool to room temperature
Toss the chips in the plain flour
Cook in deep fat fryer for 10 minutes at 120°c
Turn the fryer up to 190°c and fry again until golden brown
Warm goose fat and toss chips in the oil, drain on kitchen towel
Sprinkle liberally with Maldon salt
Enjoy with malt vinegar and tomato ketchup
